This project is concerned with the development of a food sensor based on measurement of the proportion of an ultrasonic pulse reflecting from the interface between food and the sensing probe. Recent progress in this project has included:

  • Measurement of simple solution concentration
  • Measurement of Newtonian viscosity
  • Measurement of solid fat content · Measurement of powder dissolution kinetics
  • An internal calibration system

The complete sensor will allow non-invasive, on-line sensing of these and other food properties either through a hand held probe or through a sensor mounted in pipe wall. Some potential applications will be in the measurement of chocolate temper, petrochemical and plastic viscosity and gross composition
